Waterford Castle is a 16th-century stone castle built by the Fitzgerald family, who were granted the land in the 12th century. Gothic wings were added in the 19th century. It sits on a private 310-acre island reached only by car ferry, making it the only Irish castle hotel on its own island. A medieval keep remains at its core.

You can stay in one of 14 individually styled castle suites furnished with antiques, or choose a self-catering lodge. The Munster Room Restaurant serves award-winning cuisine, and afternoon tea is taken in the conservatory. An 18-hole championship golf course, woodland and cycling trails, and riverbank picnic areas are on the estate. Falconry, archery and clay pigeon shooting can be arranged.

Lismore Castle dates from 1170 and stands on the site of a 12th-century fortification granted to King John. It has been the Irish home of the Duke of Devonshire’s family, the Cavendishes, since 1753. The castle is offered on an exclusive-use basis with 15 bedrooms, overlooking the Blackwater river.

The rental includes butler and waiting staff, a private concierge and all meals prepared by a head chef. Inside are a medieval banqueting room, a cinema room, a billiard room and a games room, plus a Pugin Hall with stained-glass windows. Seven acres of historic gardens, believed to be the oldest in Ireland, surround the castle, and Lismore Castle Arts gallery is accessible to guests.

Wilton Castle has a fortified tower on its site since at least 1247. In 1837 the architect Daniel Robertson remodelled it into its current castellated Gothic form. Arsonists burned the castle in 1923, and it was later restored. Today it operates as a luxury exclusive-use and boutique hotel.

The castle’s story spans seven centuries, from medieval fortification to Victorian revival and modern recovery. Guests can stay in a building that carries the marks of its 1923 fire and subsequent restoration. The intimate scale suits couples and small groups who value architectural character and a sense of history over resort facilities.

Huntington Castle was built in 1625 as a garrison in the riverside village of Clonegal. It has long been home to the Durdin-Robertson family. The castle keeps its rooms to a modest number, with en-suite B&B accommodation and a self-catering wing, so it remains a genuinely fortified 17th-century place to stay.

Guests can join guided castle tours, take evening strolls through the formal gardens, or enjoy afternoon tea in the courtyard. The estate has a woodland playground, tea rooms and a shop. The self-catering apartments occupy the former chapel. The castle kitchen is historic and breakfast is served there for B&B guests.

Kilkenny Castle began in 1195, when William Marshal raised it where a timber fort had stood before. For almost 600 years it was home to the Butler family, who held the titles of Earl and later Duke of Ormond. The state rooms, picture gallery and formal parterre gardens overlook the River Nore.

Managed by the Office of Public Works, the castle is open to the public and is one of Ireland’s most visited. You can tour the state rooms, climb the surviving medieval circular corner towers for views over the city, and walk the formal gardens. The castle also hosts cultural events and university degree ceremonies.

Reginald’s Tower was built by the Anglo-Normans between 1253 and 1280 on the site of an earlier Viking fortification. It is reputed to be Ireland’s oldest urban civic building, still in official use after 800 years, and has been a mint, a prison and a military store. The tower witnessed the marriage of Strongbow and Aoife and held out through a Cromwellian siege in 1650.

Today the tower holds the Waterford Viking Museum, where archaeological finds from the 2003 excavations at Woodstown are displayed. You can climb the spiral staircase through thick walls, see the cannonball embedded in the north wall from the 1650 siege, and learn about the tower’s many roles. It stands in the heart of Waterford city.

Construction of Enniscorthy Castle began in the late 1190s under the Prendergast family. It took its present four-drum-tower form after being rebuilt in the 1580s. The castle later held poet Edmund Spenser’s rival landlords as prisoners and served as a barracks during the 1798 Rebellion.

Today the castle houses a museum on the town’s history, exploring its evolution from Norman fortress to family home. You can tour the exhibits, examine the distinctive four-drum-tower architecture, and learn about the castle’s role in the 1798 Rebellion. It is centrally located in Enniscorthy town and is wheelchair accessible.
